This harvest was sorted 3 time! 3! It was delicious on the first sample but was a little inconsistent.  I was very happy with after the second sorting, but the importer was on the edge.  By the end of the 3rd sorting Ramon had removed nearly 7000lbs of perceived "defects".   The end product is spectacular the extra work that went into this harvest paid off.

Pro Tip: Honduras is a rising star, they are focusing hard on quality from crop selection to cherry processing (wet process).  Save a couple pounds of the raw bean and do a direct comparison from crop to crop.
